Roasted Sweet Potatoes with Yogurt Topping

  • Nut Free
  • Soy Free
  • Vegan


  • 1 5.3oz cup CHKP Vanilla Yogurt
  • 3 medium sweet potatoes
  • 3 tbsp date syrup or sweetener of choice
  • Sprinkle of cinnamon


  1. Preheat oven to 425F
  2. Poke fork holes in sweet potatoes
  3. Roast potatoes for 45 mins-1 hr depending on size, until fork tender
  4. Slice lengthwise and allow to cool
  5. Dollop CHKP on top and drizzle on date syrup. Add a sprinkle of cinnamon if desired.
